Two-faced Pan-fried Noodles is a famous traditional Suzhou-style noodle dish. It once disappeared for about 30 years before getting popular again.

Cooked noodles are fried in a pan until they slowly turn golden and crispy. The noodles are usually served with toppings containing sliced eel or shrimps mixed with other ingredients, and a bowl of egg soup.
