Teihuangyou

“Teihuangyou” is a term in Suzhou dialect. “Tei” means “only”, while “Huangyou” refers to high-purity crab cream and roe.

It is a kind of paste made by pan-frying crab cream and roe with lard, onion and ginger and then stewing the mixture with yellow rice wine. Some lard and pepper can be added before the paste is taken out of the pan.

In the past, Suzhou locals made this paste to keep the flavor of crabs. They put the paste they made into a bottle or a can so that they can enjoy it any time of the year.

The paste is a perfect pairing for rice.
