Noodles with Specially-made Chicken, called “Dongjimian” in Chinese, is a traditional Suzhou-style noodle dish known for its specially-made chicken topping. The complicated technique of making such noodles had been lost for more than half a century before it was reused in recent years.
It is worth mentioning that the topping must be made with free-range roosters eight months to one year old, and the preparation of the topping takes more than eight hours.
