The Fan-dried Noodles feature boiled noodles dried by an electric fan, an interesting way to keep the noodles from sticking together.
The noodles are much thicker than many other Suzhou-style noodles, and therefore are chewier and more suitable for making cold noodles dressed with sauce. They can be mixed with canola oil, shredded cucumber and carrot, mung bean sprout, and specially prepared gravy.
